The mild fava bean protein is enzymatically inactivated through heat treatment. This reduces typical bitter compounds – without the use of additives or chemical processes. The protein remains functionally suitable for use, is well tolerated and offers a balanced amino acid profile. It is ideal for applications where the flavour needs to remain neutral – such as in extruded products, fortified drinks, doughs or vegan convenience products. Production is carried out mechanically, and the raw material is sourced from European crops.
