Barley protein is produced through the mechanical upcycling of spent grain, a by-product of beer production. This fine, beige-coloured powder provides around 55 % protein and also contains approximately 24 % dietary fibre – whilst being low in fat and carbohydrates. The concentrate provides significant amounts of calcium, iron, magnesium and zinc. It is particularly suitable for plant-based meat alternatives, but can also be used in baked goods, dough-based products, snacks and functional applications. As it originates from the DACH region, the protein is also a key component in terms of sustainability and regional sourcing.
