Linseed oil
Linseed oil is obtained by cold-pressing the seeds of the flax plant (Linum usitatissimum). The plant is widespread across many regions of Europe, and the oil is characterised by its golden-yellow colour and mild, nutty flavour.

The oil contains a particularly high proportion of alpha-linolenic acid (an omega-3 fatty acid) and has a balanced ratio of omega-3 to omega-6 fatty acids. It also provides vitamin E and other antioxidants. Due to its composition, linseed oil is sensitive to heat and is best used in cold dishes.
Linseed oil is used in the food industry primarily in cold dishes, such as salads, dips or traditional dishes like potatoes with quark. In the animal feed sector, it serves as a high-quality source of energy, particularly for horses. It is also used in the technical industry, for example in paints and varnishes.
