GSH yeast is a special form of inactivated yeast with an increased content of reduced glutathione (GSH), a natural tripeptide with antioxidant properties. The yeast is specifically processed in such a way that cellular components with functional benefits remain available – particularly in terms of oxidative stability and technical functionality. Product characteristics may differ depending on processing, fermentation and the source of the yeast.
In the food industry, GSH yeast is primarily used to improve dough properties, emulsion stability or shelf life. It can also serve as a flavourless carrier or functional additive in a variety of applications – such as in baked goods, snacks or special blends designed to optimise processes.
