Psyllium husks come from the plant Plantago ovata and consist almost entirely of soluble fibre. They are characterised by their high swelling capacity: they can absorb up to 50 times their own weight in water. This improves the texture of doughs and recipes and helps to promote a feeling of fullness. They are gluten-free, flavourless and versatile.
Typical applications: baked goods, muesli, low-carb products, diet foods, plant-based bars.
