The native fava bean protein is produced without thermal inactivation and thus retains its natural enzymatic activity. This property can be specifically utilised in fermentative or enzyme-based applications. It provides a balanced amino acid profile, is easy to label and is free from soya and gluten. Production is carried out using purely physical methods via air classification. The protein is of particular interest as a functional ingredient in baked goods, plant-based meat alternatives or value-added drinks.
