The lentil protein isolate is extracted from red lentils and concentrated to a protein content of around 80 %. It is characterised by a balanced amino acid profile, good solubility and stable emulsifying and gelling properties. Its light colour and mild flavour allow it to be used in delicate recipes without imparting a dominant legume flavour.

It is primarily used in protein-enriched foods such as bars, baked goods, meat and dairy alternatives, and in blends for sports or diet products. It is also suitable for specialised functional applications.
