Lentil starch flour, red
Red lentil flour is a finely ground, peach-coloured flour with a mild flavour and a starch content of approximately 70%. It is gluten-free and is suitable for both sweet and savoury applications in a variety of recipes.

The flour is produced from hulled red lentils through mechanical processing. Thermal treatment causes it to lose most of its natural colour, which makes it easier to use in colour-sensitive products. The raw material contains complex carbohydrates as well as natural amounts of iron and potassium. Its strong emulsifying properties and moisture-binding capacity contribute to formulation stability, particularly in moist and texture-critical systems.
Typical applications include gluten-free baked goods, soups requiring a thickening agent, savoury ready meals, and protein- or starch-based snacks. The flour can also be easily incorporated into applications where a neutral flavour is required.
