Apple pomace is a by-product of apple juice production and consists mainly of peel, pulp and seeds. After pressing, the pomace can be further processed in both ground and unground form. It contains a high proportion of dietary fibre as well as phytochemicals, vitamins and natural fructose. Thanks to its composition, apple pomace offers technological advantages in terms of fibre enrichment and water retention.

In the food industry, ground apple pomace is used as a functional additive in baked goods, for example to increase fibre content or control volume. In the animal feed sector, it serves as a high-energy feed rich in crude fibre for ruminants, horses and game. Other potential uses include pectin extraction and as an ingredient in fruit powder blends or dried snacks.
