Chia (Salvia hispanica) is an annual plant native to Central America that grows up to 1.75 m tall and bears white or blue flowers. Originally cultivated in Mexico and Central America, it is now also grown in South America, the USA and Australia. The seeds consist of around 38% fat – primarily polyunsaturated fatty acids such as alpha-linolenic acid – about 20% protein and approximately 40% carbohydrates. They also contain minerals, vitamins and dietary fibre. Chia seeds are considered a gluten-free, nutrient-rich supplement and are often compared to flaxseeds due to their ability to swell.
Chia seeds are widely used in baked goods, muesli, snacks, and toppings, both raw and toasted. They are also processed into chia oil and chia flour, which are used in functional foods.
