Hemp seeds (Cannabis sativa) are among the oldest cultivated crops and, as the nut-like fruit of the hemp plant, are particularly rich in functional compounds. They contain approximately 30–35% fat—with a high proportion of polyunsaturated fatty acids—about 25–30% protein, as well as significant amounts of vitamin E, B vitamins, and antioxidants. The seeds are technically robust and have a balanced amino acid profile, making them suitable for numerous processing applications.

Hemp seeds are used in foods such as baked goods, muesli, snacks, and bars—in both hulled and unhulled forms, as well as roasted. In addition, they serve as the raw material for hemp oil, which is used in cosmetics and dietary supplements. In the animal feed sector, hemp protein supplements energy-rich formulations. Due to its technological robustness and functional versatility, hemp seeds are also increasingly being used as an ingredient in innovative product concepts.
