VIOSOY T minced is an extruded protein texturate based on partially defatted soya meal. The fine-grained structure ensures good rehydration, rapid water and fat absorption, and a stable, meat-like texture. The protein content is around 48% (as a rule), which facilitates its use in protein-oriented recipes. The minced form is particularly suitable for even distribution and a homogeneous product structure.
Typical applications include plant-based minced meat alternatives, boiled and fried sausages, fillings, Bolognese sauces, and hybrid concepts combining plant-based and animal-based ingredients. The texturate can also be processed directly into protein-enriched convenience products – without a separate cooking stage.
