Potato protein is the by-product of potato starch production and is produced by a wet chemical isolation process. The protein contains a protein content of about 80%. It has a high quality amino acid spectrum and high digestibility. Due to the solanine content, it is mainly used in the animal feed sector. Low-solanine potatoes are available as raw material for the food sector.
In the food sector, the product is used for vegetable protein enrichment of foods, and it also serves as a vegetable emulsifier. In the feed sector, it is mainly used for pets and livestock.
