Description (organic) sesame flour:
(Organic) sesame flour is the partially de-oiled by-product of the cold pressing of sesame oil. It contains about 30% protein and a residual oil content of about 10%. The secondary plant substances sesamol and sesamolin are interesting. They make the flour very durable, stable and heat resistant. Sesame flour has a nutty aroma.
Sesame flour is mainly used in Asian and Oriental cuisine for seasoning, cooking and baking. It can serve as an ingredient for baked goods, pastry, fillings, etc. Due to its increased protein content, it can be used for protein fortification of foods.
