Description (organic) citrus fiber:
Citrus fiber is a vegetable food ingredient. To obtain the fiber, the hard, de-juiced citrus fruits are first dried and then gein ground. It has a very good content of soluble and insoluble dietary fiber. The soluble part consists mainly of pectin, which has prebiotic properties. The total dietary fiber content is up to 90%. The enrichment of dietary fiber in products, improves their nutriscore. Due to their good swelling capacity, citrus fibers can partially replace thickeners, emulsifiers and stabilizers. Depending on the degree of micronization, citrus fibers are used in various food categories.
The fine, light-colored powder with a neutral taste is used in a variety of ways – in meat and sausage products, delicatessen, baked goods, frozen products or beverages, in ice cream or fruit preparations.
