Description (organic) pea starch, mild:

The pea has been a cultivated plant for over 7,000 years, making it one of the oldest plants grown. Even back then, the pea was considered a source of livelihood along with other legumes and simple cereals. Today, the main cultivating countries are India, China, France and Canada. Due to its high amylose content, (organic) pea starch has some interesting properties. The gelation capacity and viscosity profile of this native starch show the same performance as some modified starches. It has excellent stability at high temperatures, high shear forces and large pH variations, and also promotes the formation of cut-resistant gels. Another advantage is the enhancement of the crispness of long-life baked goods and extruded products.

Due to its gel-forming capacity, pea starch is particularly suitable for puddings and desserts, but is also used in baked goods and long-life baked goods.
