(Organic) tapioca starch is made from dried and triturated cassava root. Cassava root is widely used in many parts of the tropics and subtropics for its starch content. Usually the root is used, which can weigh up to 10 kg, and the leaves are occasionally used as a leafy vegetable.
Tapioca starch can be used as a binder for cooking, similar to potato starch. Since it is gluten-free and almost a perfect substitute for cereal flour, it is more and more used for baking. In animal feed, it is used as an important source of carbohydrates. In addition, it is used in the stabilization of feed pellets due to its gelatinization properties.
