Description (organic) spelt:
(Organic) Spelt is a type of grain in the wheat genus. Unlike wheat, however, spelt is still covered with husks. It provides more minerals, vitamins and trace elements such as zinc or silicon than wheat. It is also rich in protein and has essential amino acids. Due to the increased protein content in spelt, it contains more gluten. Nevertheless, the gluten intolerance of many sufferers does not seem to be as intense with spelt as with normal wheat. In the early years, spelt was extremely popular. It was especially widespread in Baden-Württemberg, which is why it is sometimes called Schwabenkorn.
