Description (organic) buckwheat flour:

Buckwheat is a pseudo cereal. That is, it is used like a cereal, but is not a sweet grass and free of gluten. The buckwheat seeds are particularly rich in vital substances, high-quality minerals and easily digestible proteins. The good digestibility can be attributed to the favorable amino acid composition. (Organic) buckwheat flour contains about 70% carbohydrates, 17% fat and about 10% protein. 70% of its fat spectrum consists of unsaturated fatty acids. It has a nutty aroma, as the buckwheat seeds are roasted before grinding. Depending on the degree of grinding, the process is referred to as (organic) buckwheat flour or groats.

Buckwheat flour is particularly suitable for cooking for porridges, soups or pasta. In bread baking, it is mostly used in mixtures with other flours. As a very ancient medicinal plant, its consumption helps against diseases such as diabetes, varicose veins and hypertension. Its healthy amino acid combination of lysine and tryptophan also improve learning ability, as well as sleep.
