Description (organic) barley flour:
The (organic) barley flour is produced from a side stream of beer production by mechanically upcycling the barley spent grain. It has a protein content of 26%. Barley flour has a low content of carbohydrates and saturated fatty acids (less than 5% each), but contains a high proportion of dietary fibre (47%). It is also rich in minerals such as calcium, iron, magnesium and zinc. The barley flour is an innovative, sustainable and regional product from the DACH region.
The beige-coloured powder is ideal for the production of confectionery, bakery and pasta products, snacks and convenience products. It is also used for protein enrichment.
