Description (organic) cocoa fiber:
(Organic) cocoa fiber is obtained from cocoa shells. In the process, the shell of the cocoa bean is ground so finely that a powder is produced that can hardly be distinguished from cocoa powder in appearance alone. Unlike the usual cocoa powder, it is lower in carbohydrates and has about 60% fiber content. It has a good water binding capacity of 3-5:1 and allows to improve the nutri-score.
Due to its delicious cocoa taste, the fiber is often used as a substitute for sugar or cocoa powder. As a result, it is often found in chocolate products, pastries and baked goods and snacks. Here, too, the fiber is often used for sweet spreads such as nougat cream. In the sectors of sports nutrition or dietary products, the fiber is used in many ways.
