Description (organic) spelt fiber:
(Organic) spelt fiber is obtained from the plant parts of (organic) spelt, more specifically from the husks and stems of spelt. With a dietary fiber content of about 70-80%, spelt fiber is used primarily for fiber enrichment. With the use of vegetable fibers in product manufacturing, an improvement of the Nutri-Score is made possible. They are also used to bind water and fat, as a freshness retaining agent, stabilizer, filler and carrier.
Mostly, spelt fibers are used for the production of bakery products. However, fiber is also used for dairy and cheese products, meat and sausage products, flavorings and vegan substitutes.
