The soybean is characterized by its high protein content of about 37%. The composition of the amino acids is similar to that of meat. In the production of the soy protein concentrate native, the bean is de-oiled by mechanical pressing. The soy protein is particularly popular for the production of vegetarian and vegan meat substitutes because of its meat-like texture.
All product variants can be offered as active and inactive versions. In the inactive protein, the antinutritive ingredients are inactivated by heating, so the (organic) soy protein can also be consumed raw, e.g. in protein shakes or smoothies. If no heating takes place, the antinutritive ingredients are still active.
