Description (organic) lentil starch flour, red:

Red Lentil Starch Flour is a mildly flavorful fine flour with a pale peach color that is ideal for a variety of applications, including baked goods, processed foods, soups and snacks. Much of the color is lost when heated, making this mild gluten-free flour very versatile and suitable for sweet and savory applications. It offers an excellent combination of protein (15%), fiber (3%), complex carbohydrates and minerals (in particular iron and potassium). It has a mild legume flavor with a soft texture and mouthfeel. Its good emulsifying properties and good moisture retention improve the stability of recipes, making the raw material ideal for (gluten-free) baked goods, soups, ready meals and snacks.
